Eric Salome
Eric is the culinary half of Farm Table Health—a classically trained chef with Texas roots, Swiss technique, and a big heart for sustainability. His food philosophy? Real ingredients, local flavors, and meals that make you feel good without sacrificing taste (or joy).
After training at the prestigious Culinary Arts Academy of Switzerland, Eric went on to open Rinds, Wines, and Swines in Cincinnati—a farm-to-table restaurant celebrated for its whole-animal butchery, fermentation-forward menu, and thoughtfully curated wine pairings. Every ingredient came from nearby farms, and every dish told a story of seasonality, sustainability, and serious flavor.
These days, Eric brings that same creative spirit home—tending the garden, experimenting with plant-based recipes, and whipping up nourishing meals that fuel our wellness journey (and still pair beautifully with a glass of wine). He’s passionate about helping people eat better without overcomplicating it, and believes healthy meals can and should be full of flavor, fun, and flexibility.
When he’s not in the kitchen, you’ll find him sketching design plans for his next creative venture, trying out a new fermentation project, or turning whatever’s in the fridge into something magical.
Favorite motto: If it grows together, it goes together—especially with a side of his homemade bread and wine.

Mandy Geyer
Mandy is the voice behind Farm Table Health—a health actuary turned wellness advocate who believes that taking care of your body shouldn’t mean giving up the things you love.
After nearly 20 years in the corporate world, she traded PowerPoint decks for a more purpose-driven path, blending her expertise in public health, food systems, and behavior change into a lifestyle that actually feels good.
With a Master of Public Health from Johns Hopkins and a marathon medal (or seven) hanging nearby, Mandy is passionate about making wellness realistic—especially for busy people who want to feel better without obsessing over every bite or step.
Her approach? Eat mostly plants, move your body often, and ask yourself one simple question: Does this serve me? If not—it’s a no.
At Farm Table Health, she shares what she’s learned (and is still learning) about building healthy habits with moderation, flexibility, and the occasional glass of champagne.
Whether she’s breaking down wellness myths or helping people rethink self-care, Mandy’s goal is simple: to help you become the version of yourself you actually want to be.
